1. I made Baked Falafel Salad for lunch yesterday. It was delicious, fairly healthy, and easy to make. 
I bought a box of Far East Falafel Mix. I simply combined the mixture with water, let it sit for 10 minutes, and then made about 14 patties on a baking pan. I baked it for 30 minutes (15 minutes/side).
I then mixed organic lettuce, green pepper, roma tomato, organic kiwi and carrots on a plate and added the falafel. I finished off with some non-fat ranch and a sprinkling of parmesan. Yum!
